HARVEST

The grapes were harvested during the fourth week of April. 8.0 tons per hectare.

VINIFICATION

Is destemmed and a soft grinding is performed all grapes. Subsequently cold macerated at 8 for 5 days. The alcoholic fermentation takes place between 26 and 28 ° C for 10 days. The fermentation is carried out in small stainless steel tanks and
two or three daily traditional pumping them. Post-fermentation maceration for 10 days and 100% malolactic fermentation in barrels.

AGING

 12 months in French oak barrels of 225 liters.

FINING AND BOTTLING

It is not claried. Filtered by land before bottling.

TASTING NOTES

Deep ruby red, intense aromas of black fruits such as blackberries, hints of mint, cassis and spices. Excellent structure and good fruit concentration on the palate.
Fresh and fruity, with long lingering nish.

SUGGESTED SERVING AND FOOD PAIRING

Excellent alternative to pair with various meats. Serve between 17 and 18ºC.

VINIFICATION

The grapes used to make this wine are manually selected from the best fruit of the vineyard. Prefermentative maceration at 8 ° C for 5 days followed by alcoholic fermentation in stainless steel tanks at a temperature between 26 and 30 ° C for 7
days. The post fermentation maceration is then performed and extends for 20 days

AGING

16 months in French oak barrels.

TASTING NOTE

Intense red with violet tints ruby. Ripe fruits like blackberry and blueberry, is complemented nicely with an elegant touch of toasted oak aging.
Deep and juicy palate with concentrated berry avors, a hint of spice, licorice and velvety tannins. Long and complex nish.

TASTING NOTES

Wine with an intense and deep cherry red with brown hues. Expresses avors such as white pepper, black tea, delicate notes of violet, blueberry and murtilla with a background of wild grasses and leaves, oak bark, southern forests and volcanic rocks.
The palate expresses round and soft tannins. Wine deep, long, medium and silky body.

FOOD PAIRING

Game meats such as wild boar, sweetbreads, lamb stick, pasta with heavy sauces, mature cheeses. Red meat well seasoned to balance the strength of the wine.

Post fermentation maceration of 5-21 days, depending tasting.

100% malolactic fermentation in barrels.

AGING

16 months in French oak barrels of 225 L, 100% of the mixture.

It breeds in French oak barrels for 13 months.

TASTING NOTES

Deep ruby red wine color. Very complex nose, where aromas overlook

black fruits and spices such as mint. Very balanced on the palate with tannins

round, include avors like leather and fresh fruit.

FOOD PAIRING

Looks good with sh, pasta and exotic meats like prosciutto.
